The following recipes were shared by Zemi users and prove that eating healthy can be easy. All you need are some leftovers!


Something that I do often is a pizza & salad night. 

I usually will have some chicken in my fridge & veggies that need to be eaten up. It's easy to make the dough out of my pantry staples like yeast & whole wheat flour. Then I'll add a sauce base out of an open container I already have, like pesto, red pasta sauce, or even bbq sauce! Next, I'll sprinkle on some veggies like tomatoes & mushrooms, my chicken, & some shredded cheese. I also use my old leftover veggies as a side salad too. 

This is also a great dinner because I can take any leftover pizza slices to work the next day as a lunch.

I had a leftover box of stuffing from thanksgiving that I used to make meatloaf! This is a great way to use leftover veggies or meat too.

Recipe:

  • Box of stovetop stuffing

  • 1 1/2 c warm water

  • 1 onion

  • 1 bell pepper

  • 2 carrots (shredded)

  • 2 lbs ground turkey or beef

  • 2 eggs

I combined and portioned into 5 mini meatloafs and baked on 350 for 45 minutes!

I love making taco soup if I have leftover chicken! I usually will just add whatever I can to a pot with some broth and let it simmer. The recipe usually looks like:

  • Leftover chicken

  • A diced onion

  • Tomato paste

  • 1 can diced tomato

  • 1 can black beans  

  • 1 can corn 

  • 4 cups broth 

  • 1 pack taco seasoning 

  • Garlic, salt and pepper to taste 

I like to top it with plain Greek yogurt, cilantro or jalapeño peppers if I have them on hand and eat them with some tortilla chips on the side!

So my leftovers this week was rotisserie chicken, and I have a bunch of random veggies in the fridge I need to get rid of before they go bad. 

I made a chicken salad which includes: 

  • rotisserie chicken scraps 

  • 1 bag of mixed greens from trader joe’s 

  • 1 bell pepper 

  • 1/2 red onion 

  • 1/2 cucumber 

  • sprinkle of sunflower seeds 

 and I made my own vinaigrette which includes:

  • 1/4 cup of avocado oil

  • 2 tbs of of apple cider vinegar

  • 1 tbs of dijon mustard 

  • 1 clove garlic pressed 

  • a tsp of honey 

  • & salt and pepper to taste

Easy burger bowl salad! 

Ingredients:

  • Your choice of lettuce 

  • Mushrooms 

  • Red onion 

  • Cherry tomatoes 

  • Leftover turkey/ beef burgers 

  • Potatoes 

  • Pickle 

  • Avocado 

  • Cheese 

  • Dressing of your choice 

Description: 

This is a super easy recipe that is great to use up extra burgers from a summer bbq! It’s a healthy way to get your vegetables in and a lot of color and healthy fats in the avocado!

Serve with watermelon or a fruit salad! 

Steps:

  1. Cut up lettuce and half the tomatoes and slice the red onions 

  2. Sauté the mushrooms with olive oil on low heat until tender 

  3. Cut potatoes in French fry slices and toss in the air fry with some garlic seasoning for 18 min at 400F 

  4. Crumble leftover burgers on top of lettuce and add mushrooms, tomatoes, onions and French fries. Add in whatever toppings you like including pickles, avocado, and cheese! 

  5. Top with your favorite dressing! 

  6. Enjoy with fruit on the side or low sugar/ low sodium baked beans 

  7. Enjoy!!
